DAMSON SORBET WITH DAMSON TREE VODKA SYRUP

Sorbet:
1 kg damsons
450g caster sugar
Damson Tree Syrup:
100ml Damson Tree Vodka
40g caster sugar
• Place sorbet ingredients in a medium-sized pan on a low heat. Stir until the damsons begin to burst
• Remove from the heat and sieve, pushing with a spoon. Pour the syrup into an ice-cream maker and churn until frozen, or pour into a container and freeze, removing every two hours to fork through the crystals. Repeat this process three times
• Remove from freezer twenty minutes before serving
• For the sauce, dissolve the caster sugar in the Damson Tree Vodka over a low heat. Reduce for fifteen minutes until the liquid has thickened to a viscous consistency
• Pour over the sorbet

Duck with Damson Vodka – Serves 4

4 Duck Breasts
2 tbsp brown sugar
4 tbsp sherry vinegar
4 tbsp Damson Tree Damson Vodka
zest of 1 orange
• Slash each breast 4 times and put in oven dish
• Mix sugar, vinegar, vodka, orange zest. Add salt and pepper.
• Pour over breasts, massage into cuts and underneath. Marinate for at least 6 hours.
• Heat a little oil in griddle pan or heavy frying pan over high heat.
• Place duck breasts skin side down and cook until skin is coloured. Keep brushing with marinade. Turn over and cook for further 5 mins until golden on outside and pink in middle.
• Rest meat for 5 mins before serving with hearty veg and roast potatoes.
